so i tried some new things in the kitchen this week, and i thought, should i post this on the blog? well it's my blog, and i can post food if i want to, so i did. :)

fiesta chicken + wild rice with asparagus

-12 organic, farm-raised buffalo wings
- two sticks of celery
- 1/2 red onion
-1/2 a lemon
-1/2 a lime
- 3-4 cloves of garlic
- 2 tablespoons of white vinegar
- 1 tablespoon of E.V.O.O.
- a variety of your favorite seasonings: salt, pepper, lemon pepper, thyme, corriander, cayenne pepper, seasonsed salt, paprika

1. chop veggies and quarter lemon + lime.
2. shred garlic.
3..after rinsing and drying chicken, place in a large mixing bowl.
4. add shredded garlic and lemon/lime juice. throw quartered fruit into the bowl. mix thoroughly.
5. add seasoning mix to chicken, ensuring that the wings are thoroughly coated on both sides.
5. add oil and vinegar.
6. add chopped onion and celery.
7. mix again. place aluminium foil over a cookie sheet. spray with pam. pour chicken mixture onto the cookie sheet.
8. bake chicken at 400 degrees for 20 - 25 minutes. broil upon end for 1-2 minutes if you want crispier wings.


wild rice + asparagus

box of uncle ben's wild rice
e.v.o.o. or butter
chopped asparagus
clove of garlic

1. cook rice according to directions on the box.
2. in a heated wok, add about a teaspoon of E.V.O.O. and chopped asparagus.
3. ensure the asapragus is coated, adding salt and pepper and a clove of garlic to taste.
4. cook for 4 minutes on stove-top, covering the wok with a lid so that the asparagus can soften.
5. add 2-3 cups of cooked wild rice.
6. stir  stir stir for 2 minutes et voila!
